Who we are
Llevamos 15 años en la calle San Sebastián y somos la barra de cerveza artesanal con mayor volumen de ventas del Caribe. Nuestra Taberna cuenta con 50 cervezas de barril en constante rotación y sobre 150 cervezas de latas y botellas. Además contamos con una cocina que hace tó desde cero, desde las salsas hasta algunas de nuestras mayonesas, sin contar con nuestras alitas, cubanos, tacos de pescado y crunchwraps — la gente sube la cuesta por eso.
Fifteen years on Calle San Sebastián. The highest-volume craft beer bar in the Caribbean. 50 rotating taps, 150+ bottles, and a kitchen that makes everything from scratch — down to the sauces and some of the mayo. Wings, Cubanos, fish tacos, crunchwraps. People walk up the hill for it.

What we're looking for, and why
En esta casa, la palabra "chef" no se regala, se gana. Es de quien se pone la chaqueta, se enrolla las mangas y está en la cocina todos los días.
In this house the word "chef" isn't handed out. It belongs to whoever puts on the jacket every day and is in the kitchen every day.
Por años, las recetas han venido de arriba, de la mano de los dueños, entregadas a la línea para que las ejecuten — y se han ejecutado bien, por eso estamos aquí. Pero esto ya no es suficiente. Hace falta un cerebro culinario dentro de la cocina, no encima de ella: alguien que lea hacia dónde va la comida, que construya platos nuevos, que monte especiales que valgan la pena y que empuje nuestra cocina hacia el próximo nivel.
For years the recipes have come from above — from the owners' hands, handed to the line to execute. And they've been executed well. That got us here. But it's not enough anymore. What's needed is a culinary brain inside the kitchen, not over it: someone who reads where food is going, builds new dishes, puts up specials worth putting up, and pushes this forward.

What to know before you apply
Los dueños estamos metidos en esto todos los días, y vamos a seguir así. Estamos en Slack todo el día y en todos los correos. The owners are in this every day, and that isn't changing. We're on Slack all day and on every email. We handle beer and liquor ordering, the planning, the compliance, and the big-picture side of the business. Especially at the start, both we and our GM, Matt, will be watching kitchen operations closely. That's not disrespect — we love this place. Fifteen years here, and it cost real effort to build.

No hay director de F&B corporativo ni manual de marca. Se responde directamente a los dueños y al Gerente General. Además hay un equipo con personas que llevan 5 años o más con nosotros. Es distinto: más cercano, más humano, y por lo tanto más exigente a la vez.
There's no corporate F&B director and no brand standards binder. There are owners, and there's a GM. And there's a team with people who've been with us five years or more. That's different — closer, more human, and more demanding all at once.

What doesn't change, and what gets built
Las alitas, los cubanos, los tacos de pescado, los crunchwraps — esas recetas no cambian. Ni un poquito, ni "mejoradas." Llevan años siendo la razón por la que la gente sube la cuesta, y su primer trabajo es ejecutarlas exactamente como están.
The wings, the Cubanos, the fish tacos, the crunchwraps — those recipes don't change. Not a little, not "improved." They've been the reason people walk up the hill for years, and your first job is to execute them exactly as they are.

The rest we do want from you: new dishes, specials worth putting up, and judgment about where food is going.

Here you don't edit what's there — you build on top of it.
Y sí, muchas cosas nuevas han llegado a nuestro menú y se han quedado. Varias de estas salieron de sugerencias de nuestros propios empleados, tanto de la cocina como de la Barra. Así es que se entra a nuestro menú: proponiendo algo tan bueno que la casa lo adopte. Las decisiones del menú fijo se toman juntos, no por usted mismo, y a veces la respuesta va a ser "eso se queda como está."
And yes, new things have made it onto that menu and stayed. Several came from suggestions by our own people, back of house and front. That's how you get onto that menu: by proposing something good enough that the house adopts it. Fixed-menu decisions get made together, not by you alone — and sometimes the answer will be "that stays as it is."

Una cosa más, que nos gustaría dejar clara
One more thing, plainly
Esto es Lúpulo. No va a ser "Lúpulo by fulano." La comida va a llevar su mano — su técnica, su criterio, su estándar — pero no su firma. Si estás buscando un lugar donde dejar una marca grabada con tu nombre, con respeto: no somos nosotros.
This is Lúpulo. It won't be "Lúpulo by so-and-so." The food will carry your hand — your technique, your judgment, your standard — but not your signature. If you're looking to put your name on a door, respectfully: not us.
Dónde sí va a crear

Los especiales. Usted los propone y, al principio, nosotros los aprobamos.
The specials. You propose them and, at first, we approve them. That's where you live.
La salamandra. Acabamos de adquirirla y nadie la ha usado todavía. Este es su primer proyecto de verdad: ¿qué podemos hacer con ella que no podíamos hacer antes en nuestra cocina?
The salamander. We just put it in. Nobody has used it yet. That's your first real project: what do we do with it that we couldn't do before.

What's coming. We're growing. We won't detail plans in a job ad, but whoever takes this has to be able to grow with us.

Queremos ser realistas en cuanto a nuestro espacio: la cocina es pequeña. Intensa, pero pequeña. Hasta que haya más espacio no hay dónde duplicar nada, y así hemos logrado llegar hasta aquí. Toca trabajar con lo que tenemos, y lo que tenemos es poco. Esto también es parte del reto.
Let's be realistic about the space: the kitchen is small. Mighty, but small. Right now it's the space we have, it is what it is, and it's how we got this far. You work with what's there, and what's there isn't much. That's part of the challenge too.

Aquí, la cocina y el salón no viven peleando. Nunca fue así y no va a comenzar ahora. Here the kitchen and the floor don't live at war. It's never been that way and it isn't starting now. Several dishes on the menu came from bartenders and servers, front of house walks into the kitchen and the kitchen walks out to the floor. The culture you build in back has to fit the one that already exists up front.

The entire business side. No caveats:
- Estará a cargo de contratar, entrenar y hacer el "Schedule" de la cocina. Su equipo y su cultura.
- Costo de la comida, inventario, órdenes y "sourcing". Esto es "hands-on" — aquí no hay un departamento de compras, usted sale y busca lo que necesita.
- Costo de labor. Usted calcula la cifra y se hace responsable de ella.
- Mantener la cocina limpia, consistente y a tiempo dentro de un edificio de los 1750s. El edificio tiene su propia personalidad.
- Que las recetas de la casa salgan exactamente iguales, 400 veces por semana, sin que nadie note la diferencia de un turno a otro.

- Making the house recipes come out identically, 400 times a week, with nobody able to tell one shift from another.

El "Schedule"
The schedule
El horario es el que haga falta para que el trabajo salga. En práctica esto quiere decir trabajar de cerca con el "crew" de la noche y cubrir noches y fines de semana cuando sea necesario.
The schedule is whatever it takes to get the job done. In practice that means working closely with the night crew and covering nights and weekends part of the time.
Aquí el negocio cuando más se mueve es en las noches y los fines de semana. No se puede manejar una cocina que uno nunca ve llena. Al principio su itinerario lo montamos juntos, no usted solo. Con tiempo y con confianza se le dará más flexibilidad. A veces vas a tener que cerrar por la noche, y servimos comida hasta el final, a las 2 de la mañana los fines de semana.
The business here happens at night and on weekends. You can't run a kitchen you never see full. At the start we build your schedule together, not you alone. With time and trust comes more flexibility. Sometimes you will need to be able to close at night, and we serve food all the way until the end, 2am on weekends.
Máximo dos días libres por semana. En temporada baja tendrá más tiempo para respirar, y cuando llegue temporada alta es "go time" — no hay otra manera de explicarlo.
Maximum two days off a week. Slow season you breathe more; high season it's go time and there's no way around it.
A quién buscamos
Who we're looking for
- Bilingüe de verdad — español e inglés, debe dominar ambos idiomas de manera fluida.
- Ha manejado una línea y un P&L. Ambos. Si cocina excelente pero le da miedo Excel, este no es el lugar.
- Proactivo. Ve el problema la primera semana, no al tercer mes.
- Ejecuta antes de innovar. Nos va a impresionar primero con consistencia, no con ideas.
- Trabaja bien con el salón. La cocina y el salón aquí son un solo equipo.
- Creativo y que "meta mano." Ideas hay de sobra; necesitamos de las que se ejecutan de manera consistente.
- Pensador independiente pero que pueda adaptarse. Tendrá control sobre el negocio y la cocina, pero el menú fijo se decide en equipo.
- Alguien que se sienta cómodo en un lugar relajado que espera un trabajo de excelencia de manera consistente. Contratamos por "vibe." Usted se queda por su ejecución.
- Truly bilingual — Spanish and English, both real.
- You've run a line AND a P&L. Both. If you cook beautifully but spreadsheets scare you, this isn't the seat.
- Proactive. You see the problem in week one, not month three.
- You execute before you innovate. You'll impress us first with consistency, not ideas.
- You work well with the floor. Kitchen and front of house here are one team.
- Creative with follow-through. Ideas are cheap; we need the ones that execute identically every time.
- An independent thinker who can also adapt. You'll have control over the business and the kitchen, but the fixed menu gets decided as a team.
- Comfortable in a relaxed room that still expects excellent, consistent work. We hire for vibe. We keep you for execution.
La Paga
The money

- Aportación fija mensual para su plan médico — aprox. $250+/mes. No tenemos plan de grupo: usted escoge su cubierta y pagamos por tarjeta de la compañía. Con eso se cubre buena parte de un plan individual decente en PR.
- 2 semanas de vacaciones pagadas a partir del segundo año. Por encima de lo que pide la ley.
- Se come aquí. Y sí… la cerveza corre por la casa (con limitaciones, obviamente).
- A fixed monthly stipend toward your health insurance — approx. $250+/month. We don't run a group plan: you choose your own coverage and we pay by company card. That covers a good part of a solid individual plan in PR.
- 2 weeks of paid vacation starting in year two. Above the statutory minimum.
- You eat here. And yes — the beer flows, within limits, obviously.
La verdad
The real talk
Esto es una barra en el medio de la SanSe: es ruidosa e intensa. Los viernes después de las 11 PM se siente la presión. En las fiestas de la SanSe la calle entera está de fiesta y usted va a estar cocinando en el mismo medio de ellas. Si las puertas están abiertas, la cocina está abierta hasta el "last call" de la barra, todas las noches. Hace calor y la cocina es chiquita. El edificio es de 1750 y a veces se comporta como tal.
This is a bar. It gets loud. Friday at 11 PM the whole thing comes down on you. During SanSe the entire street is the party and you're cooking in the middle of it. If our doors are open, our kitchen is open — 'til last call, every night. It's hot. The kitchen is small. The building is from 1750 and sometimes acts like it.
